Fresh Spinach, Tomato, Feta Salad

Note: I am not a real fan of any of these ingredients, HOWEVER, in this combination they are delicious.


Amounts depend upon size of salad.

6 servings


4 cups fresh spinach, washed, stems removed
2 large fresh tomatoes, diced
2-3 oz Fete cheese crumbles
1/4-1/2 cup Zesty Italian salad dressing, depending upon taste

Toss all ingredients together, serve.

This salad goes with any meal: Lasagna, baked potato bar, fried chicken, meatloaf, pasta of any kind, enchiladas, pizza

Dessert: Ice cream, apple and cheese, cake, pudding, pie, cheesecake, Parfaits, jello

5 Bean Chili

Ingredients:  Makes 12 servings (12 cups)
2-15.5 oz can of each kind of bean, use any kind of bean desired. I also use a can or two of chili beans for a bit of a different flavor.  Hamburger is optional.
2 pkg of taco seasoning.
1/2  cup
White beans
1/2  cup
Red Kidney Beans
1/2  cup
Mature Pinto Beans-Cooked
1/2  cup
Progresso Black Beans
1/2  cup
Chickpeas
1/2  serving
Diced Tomato with Chili Peppers [recipe]
2  Tbsp.
Tomato Paste
1  Tbsp.
Lawry's Taco Seasoning Mix
3  oz.
93/7 hamburger meat
1/4  cup
           Chopped White Onion
1  Tbsp.
Sour Cream
1  oz.
chedder cheese
Directions:  
Brown Hamburger with chopped onion.
In large kettle pour hamburger and all other ingredients along with the liquid on the beans. OPTION: add 1-16 oz bottle salsa with or instead of tomato with chilies.
Bring to a boil, and serve.
Top with dollop sour cream, sprinkle of chedder cheese and splash of chopped onion.
Serve with green salad, fry bread, bread, bread sticks, crackers etc. for dessert: pie, cheesecake, cake

chicken enchilada casserole


Ingredients:  Makes 8 servings (8 cups)
 chicken breasts
1/2  cup
 cream of chicken soup
1/2  cup
 milk
 tortillas
 green chili
1  dash
 salt
Directions:  
chop chicken into bite size pieces and grill till almost done. Rip or cut tortilla's into medium size pieces mix all other ingredients, toss all together with chicken and tortillas and place in greased baking pan. Bake at 400 for 60 minutes.

Mustard Chicken


Ingredients:  Makes 1 serving (1 each)
Chicken breast
1/4  tsp.
Ground Mustard
1  tsp.
Bay leaf
1  pinch
salt
1  pinch
Pepper
1/2  tsp.
butter
Directions:  
tear off sheet of tinfoil large enough to make a pouch around the chicken. place chicken in the center of foil and add all ingredients right on top. Close pouch starting with the top, then folding the side. Bake at 425 for 20 minutes or until chicken is done.
